Recipe: Oatmeal Cake
1 1/2 cup boiling water add 1 cup oatmeal and set aside for 20 minutes.
In a separate bowl combine 1 stick melted butter
1c. brown sugar
1 cup white sugar
1 to 1 1/3 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt and finally the oatmeal mixture. Mix until well combined. Pour into greased 9 by 13 inch baking pan and bake at 350 degrees for 35 minutes. Cool completely.
On stove top in saucepan combine: 6 Tbs butter, 1/2 cup brown sugar, 1 cup coconut, 1 cup nuts, 1/4 cup milk, 1/2 tsp vanilla. Cook until bubbly. Pour over cake. This cake is even better the second day!!
