Recipe:  Oatmeal Cake

1 1/2 cup boiling water add 1 cup oatmeal and set aside for 20 minutes.

In a separate bowl combine 1 stick melted butter

2 eggs

1c. brown sugar

1 cup white sugar

1 to 1 1/3 cup flour

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp salt and finally the oatmeal mixture.  Mix until well combined.   Pour into greased 9 by 13 inch baking pan and bake at 350 degrees for 35 minutes.  Cool completely.  

On stove top in saucepan combine: 6 Tbs butter, 1/2 cup brown sugar, 1 cup coconut, 1 cup nuts, 1/4 cup milk, 1/2 tsp vanilla.  Cook until bubbly.  Pour over cake.  This cake is even better the second day!!

Recipe Baked chicken

put chicken in covered baker.  I use a clay baker with clay lid.  Add veggies of your choice potatoes-sweet potatoes or regular, baby carrots, whole green beans, cut up onion.  Add 2 cups of chicken broth and bake 300degree oven for 21/2 to 3 hours.  will come out tender and moist.

Recipes:  Potluck Potatoes

Mix together 2 lbs. frozen hash browns, 1 can condensed cream of mushroom soup, 1 can condesed cream of chicken soup, 2 cups shredded cheese (we use cheddar), 8 ounces sour cream 1/2 cup melted butter and chopped green onion to taste and salt and pepper to taste.  Plut mixture into a 9 x 13 inch pan and add topping. Topping :  1 cup corn flakes, 2 Tb melted butter mixed together.  Bake in  a 350 degree oven for one hour.

Recipes Spaghetti Pie

Cook 8 ounce pkg Spaghetti, mix with 2T. Butter and 1/3 c. Parmesian cheese, 1/2 tsp salt, 1/4 tsp pepper and a beaten egg.  Base layer put in greased pie pan.  Cook 1 1/2 pounds ground chuck (or meat of choice), add 1 medium onion diced and green pepper 1/4c. chopped cook until soft.  Add into meat mixture 1 jar 20 ounce shaghetti sauce 1 tsp. sugar, 1/2 tsp. oregano, 1/2 tsp garlic salt.  Second layer over noodles-8 ounces ricotta cheese, then layer on meat mixture and add 4 ounce motzarella cheese grated.  Bake 350 degree oven 40-45 min.

Recipe Rhubarb Crunch

1c. sugar, 1c. water, 2T. cornstarch and 2 tsp vanilla combine and cook on stove until thickened.  In a separate bowl combine 1c. flour, 1c. brown sugar, 1 tsp. cinnamon, 3/4 c. rolled oats and 1/2 c. melted butter-mix.  Press 3/4 of this mixture into bottom of 9 inch square baking pan.  Top oatmeal mixture with 4 c. diced rhubarb.  Pour on thickened mixture and sprinkle with remaining  oatmeal mixture.  Bake 350 degrees for one hour.

Cooking:  Potato Soup

2lb. pkg Ore-ida patatoes O'Brien

1 stick butter

1 med chpped onion

garlic salt, salt and pepper to taste

3/4 can milk

1 can cr chicken soup

1 can cr celery soup

1/2 lb. shredded monterey jack cheese

Place potatoes in pot and cover with water (only to the top of the potatoes.  Then add onions and butter.  Boil 5 minutes.  Turn heat to low and add remaining ingredients and heat until cheese melts(15 minutes).  Sprinkle with parsly before serving.
