Recipe Rhubarb Crunch
1c. sugar, 1c. water, 2T. cornstarch and 2 tsp vanilla combine and cook on stove until thickened. In a separate bowl combine 1c. flour, 1c. brown sugar, 1 tsp. cinnamon, 3/4 c. rolled oats and 1/2 c. melted butter-mix. Press 3/4 of this mixture into bottom of 9 inch square baking pan. Top oatmeal mixture with 4 c. diced rhubarb. Pour on thickened mixture and sprinkle with remaining oatmeal mixture. Bake 350 degrees for one hour.
